31 Days of Green: Day 20 Celery

Celery is a green most people are familiar with, but don’t give enough credit to. More then just filler in soups or a side to your chicken wings, celery can be a tasty addition to your diet. I love the old ‘ants on a log’ except I do the adult version with almond butter and cacao nibs! It also makes a great snack with some dip. Some people don’t like celery because of the flavor or the fibrous strands (I’m looking at you sis) but I love the crisp but juicy texture and the unique flavor. It also keeps well, is portable, and is a good source of vitamins, minerals, and antioxidants.







The recipe I have for you today is a great party appetizer or fun dinner idea. It takes regular chicken salad to a much cooler level and my husband and I found that it was a lot more filling. You can make any chicken salad recipe you like for this, but mine is pretty good, just sayin!





Chicken on a Log

Gluten Free

2 cups finely chopped chicken
½ sweet variety apple, finely chopped
1/3 cup finely chopped walnuts
1 bunch celery
½ cup mayo
1 tbl Dijon mustard
1 tbl honey
salt and pepper to taste


Chop the chicken, apples, and walnuts and add to a bowl. Mix in the mayo, mustard, and honey. Season with salt and pepper. Rinse the celery and remove the ends. Chop the large stalks into 2 inch pieces. Use a spoon to add a the chicken salad onto each piece. Enjoy!







Notes and Substitutions

  • I used a version of this homemade mayo that already had mustard and coconut sugar so I omitted the mustard and honey.
  • Make sure to chop the chicken, apple, and walnuts pretty small to make them fit easier on the celery.
